Thai green curry with chicken (Gaeng Kieow Waan)

Thai green curry with chicken is one of Thailand’s most appreciated dishes worldwide. And all the ingredients needed to prepare the dish can be found easily in Cairo. Ingredients:

5 or 6 lemongrass sticks
1 can of coconut milk
Green curry paste
Thin slices of fresh ginger
400 grams of chicken filet in cubes
Fish sauce
Jasmine rice
3 garlic cloves
1 tablespoon of sunflower oil

Instructions:

Pour a tablespoon of sunflower oil into a wok (you can also use a normal Teflon pan) on a low fire. Cut the garlic cloves into small pieces and add them to the simmering oil. Let the garlic simmer gently without letting it get brown, and then add green curry paste to taste, bearing in mind that the curry paste is pretty hot.

Add the whole can of coconut milk to the pan, still on a low fire, and stir the paste, the garlic and the coconut milk together gently. Pour the chicken cubes into the sauce, then the slices of fresh garlic and the lemongrass cut into sections. You can add fish sauce to your taste. Let it cook gently for another 15 minutes.

Serve with plenty of fragrant Thai Jasmine rice.
