Sfiha or lahem be'ajeen is a prominent Levantine dish, found often on Palestinian, Iraqi, Lebanese or Syrian tables.
Ingredients:
For the dough:
1 kilo of flour
Small cup of melted butter
1/2 spoon of yeast
Salt
Warm water
For the topping:
1/2 kilo cooked minced meat with onions and spices
4 packs of yogurt
6 lemons
Pomegranate molasses
Directions:
For the dough:
- Put the flour in a pot and mix it with salt.
- Make a hole in the middle and pour the melted butter.
- Mix the whole and add gradually the yeast melted in water, as well as warm water until the dough softens.
- Cover the pot and leave it to ferment for an hour.
For the topping:
- Mix the cooked minced meat and onions with the yogurt, lemon juice and the pomegranate molasses.
- Spread the dough and make cookie-like portions. Add on top of each a bit of the meat mix. Put in the oven until it is baked.
