This dish came about when a moussaka craving coincided with a strong case of laziness. With the same fabulous flavors, but in less than half the time, I was feasting away at a this easy moussaka dish. Pair it with yoghurt and rice or top with cheese and eat with bread.
Ingredients
1/4 kg ground beef
1 onion – chopped
4 cloves of garlic – smushed
2 tablespoons of corn oil
4 medium sized round eggplants – peeled and chopped small pieces
1 yellow bell pepper
1 red bell pepper
1/2 jar tomato paste
1 can diced tomatoes with their juice
Cinnamon
Curry
Oregano
Thyme
Mint
Cumin
1. Heat oil and add garlic and onion.
2. Place eggplant on a tray and sprinkle with salt.
3. Add ground beef to oil and cook till brown.
4. Heat oil in another pan and add in eggplant.
5. Add chopped peppers to meat mixture.
6. Add tomato paste and tomatoes with all spices (to taste). I would suggest the cinnamon be the main spice with only a little curry and cumin.
7. When eggplant is cooked through, add into the meat and pepper mixture and cook on low for 15 minutes.
