You’ll need a potato slicer for these chips to turn out right but their nutritional value (way over that of regular potato chips) is well worth the effort. An oven French fry tray or a pizza dish will be helpful as well, as the holes in these baking dishes keep you from having to turn your chips over half way through the baking process. Add these to your child’s packed lunch or make it a side dish for a Halloween themed dinner (the chips have a lovely orange color). This is a very easy recipe and you can always vary it by adding different spices–sweet potatoes go well with rosemary, oregano and garlic salt.
Ingredients:
1 large sweet potato
2 tablespoons sunflower oil (olive oil will also work, if you like the taste)
Salt to taste
Directions:
- Preheat oven to 190 degrees Celsius.
- Peel the sweet potato and slice it with the potato slicer – keep slices thin – no thicker than ¼ cm.
- Using a brush or a paper towel, grease the fry pan with a little bit of oil.
- Use the rest of the oil to brush the sweet potatoes (or if you don’t have a brush for oil, toss the sweet potato slices with the oil in a colander).
- Bake in the oven for 10-12 minutes, until crisp!
