We’re always saying there must be something good about Ramadan in the summer and although we may thank God every day that traffic is less because schools haven’t started yet and we may find it a blessing that it’s still considered summer so we can spend Ramadan at the beach, one little hidden blessing in a summer Ramadan is the luxury of keeping hydrated with one of the world’s most luscious fruits, the watermelon.
Ingredients (serves 4-6):
1 red onion, sliced thinly
Juice of 1 lime
6 cups cubed watermelon, seeds removed
1 cup crumbled Greek feta cheese, can be substituted with Egyptian ‘gibna vita’ but this is more creamy and therefore will get smushed if you mix it too much
½ cup chopped fresh mint leaves
½ cup chopped kalamata olives
Dash of olive oil
Sprinkle of balsamic vinegar (optional)
Directions:
Soak onion in lime juice for 15 minutes.
In the mean time, combine watermelon, mint and olives.
Add onions and toss.
Mix in feta if Greek. If Egyptian creamy feta, sprinkle on top and do not mix in.
Top with olive oil and balsamic vinegar.
Chill and serve!
