A specialty from the south of France, Poulet Basquaise combines a mix of flavors that will explode in your mouth. Ideal as a Ramadan recipe, it’s easy, cheap and quick to make, yet healthy, filling, and delicious as you would want your iftar to be.
Preparation 20 minutes
Ingredients for 6 people:
1 chicken cut into 6 pieces.
1kg of tomatoes
700 grams of green and red peppers, sliced lenghtwise
3 thinly sliced onions
3 cloves of garlic
1 bouquet of several aromatic herbs such as Provence herbs, Basil, thyme, parsley, bay leaves
olive oil
pepper and salt
Directions:
- Heat 4 tablespoons of olive oil in a big pan
- Brown the onions, the pressed garlic and the peppers
- Leave it on the heat for 5 minutes.
- Wash, peel and cut tomatoes into pieces
- Add them to the pan
- Add a small amount of salt and pepper
- Put the lid on the pan and leave it simmering for 20 minutes
- In another pan heat olive oil and brown chicken pieces that have been salted and peppered
- Add the vegetables and cover with a lid
- Add the aromatic herb bouquet
- Leave on the heat for 35 minutes
