Well, despite reports by meteorologists and self-proclaimed weather experts that the weather is only ten degrees Celsius, it seems really, really cold.
The only path to inner warmth is chicken soup. Cook up this easy soup tonight for a light and comforting dinner with psychological and physiological cold-combating powers.
Chicken orzo soup
Ingredients:
½ cup orzo (lissan asfour)
1 onion, chopped
½ cup large (imported) celery, chopped
½ cup carrots, chopped
½ cup potatoes, chopped
3 chicken breasts, chopped in cubes
2 cubes low sodium chicken stock (Maggi)
1 teaspoon thyme
1 tablespoon parsley (fresh is better)
1 teaspoon oregano
1 bay leaf
2 lemons (or to taste)
Directions:
- Boil orzo in water with one cube of chicken stock for ten minutes and drain.
- In another pan, cook chicken cubes, onion, carrot, potato and celery in a spoon of sunflower oil–cook until chicken is cooked through.
- Add in four cups of water, parsley, oregano, bay leaf and thyme and bring to a boil.
- Simmer for ten minutes–remove bay leaf.
- Add in cooked orzo, salt and pepper and lemon–boil for a minute and serve!
